Holiday Thursday

I know the Fourth of July is a ways out but I have lots to share and these treats would be great for Memorial Day as well.  Nothing says fun like red, white, and blue food.  Check out the Firecracker Bundt Cake below!

Mommy Made It Monday-Split Pea with Ham Soup

Hello! So I missed posting last week, working on tiling the basement....long story. This is soup I made for Mike since he now seems to have the dreaded sinus infection that has been going around. I got the recipe from, my favorite go to site for all sorts of recipes for things I have in the kitchen right now.

Split Pea and Ham Soup I


  • 1 cup chopped onion
  • 1 teaspoon vegetable oil
  • 1 pound dried split peas
  • 1 pound ham bone
  • 1 pinch salt and pepper to taste


  1. In a medium pot, saute onions in oil. Add the split peas, ham bone, and enough water to cover ingredients; season with salt and pepper.
  2. Cover, and cook until there are no peas left, just a green liquid, 2 hours. While it is cooking, check to see if water has evaporated. You may need to add more water as the soup continues to cook.
  3. Once the soup is a green liquid remove from heat, and let stand so it will thicken. Once thickened you may need to heat through to serve.

I added two cups of chicken broth, Italian Seasoning (I seem to add that to everything), and a Bay Leaf as suggested by one of the comments. It came out delicious. I also found a Michigan cookie cutter to replace the one that rusted out, Yippee! Michigan biscuits rounded out the meal!

Happy Mother's Day

I had a very restful and fun Mother's Day today.  I went to brunch with a friend to a great little restaurant in Charlevoix - the Edgewater Bistro.  It was a lovely sunny morning and the Edgewater has great views of Round Lake and the channel to Lake Michigan.  I had a yummy Greek Frittata and a fruit cup.  If I were a blogger worth her stuff, there would be a picture of my food.   However I just wolfed it down.  We decided to do a little window shopping afterwards to walk off a couple of calories.  All in all, a lovely morning.

I also had great conversations with my girls on the phone.  I celebrated Mother's Day and Amber's birthday with her last week and I will see Rachael the first weekend in June to see her in a performance and to celebrate her birthday.  May is a busy time of year around here!

Toddler Tuesday

Two posts in one day! Amazing! Since this really didn't go with Monday's Dinner, I am doing a separate post for fun stuff to do with Miss L. Now that she is home with me, I have to keep her occupied. It's far too easy to let TV do the educating, not something I want to do. The whole point of me staying home was to spend quality time with her. So today we had a theme, fish! We made a collage starfish using paper from around the house and clear contact paper, read the book Baby Beluga, counted fish in a fish bowl that we colored ourselves, and  made Jello fish bowls for snack! I think she had fun.....

Mommy Made it Monday

Hello, Stranger! It's been awhile since I have blogged, working full time sapped all the energy out of me. Which was unacceptable. Which is why I quit my job! Whoopee!! So this leaves me with more time to actual do all the things I pinned on Pinterest, go to all the places with Miss L I got to take MII to, and actually cook dinner. Cooking so far has been the scariest part of me staying home. Digging out my freezer has been an archaeological nightmare. I have frozen meat in there from 2 years ago! (You know, right about the time I went back to work full time.......) So I have been trying to use up what is still edible in my freezer before I go all Costco again. This was this Monday's successful recipe, as found at The Crockin' Girls.

Broccoli-Cheese Chicken

4 to 6 boneless, skinless chicken breast
2 (10 oz) cans broccoli-cheese soup
1/2 c. milk

  1. Add all of the ingredients to your crock pot that you have sprayed with nonstick cooking spray.
  2. Salt and pepper to suit your taste.
  3. Cook for about 4 hours on high. Stir occasionally.
 Now I don't have a fancy camera to take pictures of my food, so I "borrowed" this photo from Sandra's Recipes, since The Crockin' Girls didn't have a photo either. I followed the recipe as is, and the family enjoyed it. Looking back through some of the comments though, there are several variations I am going to have to try, shredding the chicken and serving it in a bread bowl, adding crumbled bacon, lots of good ideas! Anyway, here's to more happy crocking!
