Mommy Made It Monday-Split Pea with Ham Soup

Hello! So I missed posting last week, working on tiling the basement....long story. This is soup I made for Mike since he now seems to have the dreaded sinus infection that has been going around. I got the recipe from allrecipes.com, my favorite go to site for all sorts of recipes for things I have in the kitchen right now.

Split Pea and Ham Soup I

Ingredients

  • 1 cup chopped onion
  • 1 teaspoon vegetable oil
  • 1 pound dried split peas
  • 1 pound ham bone
  • 1 pinch salt and pepper to taste

Directions

  1. In a medium pot, saute onions in oil. Add the split peas, ham bone, and enough water to cover ingredients; season with salt and pepper.
  2. Cover, and cook until there are no peas left, just a green liquid, 2 hours. While it is cooking, check to see if water has evaporated. You may need to add more water as the soup continues to cook.
  3. Once the soup is a green liquid remove from heat, and let stand so it will thicken. Once thickened you may need to heat through to serve.

I added two cups of chicken broth, Italian Seasoning (I seem to add that to everything), and a Bay Leaf as suggested by one of the comments. It came out delicious. I also found a Michigan cookie cutter to replace the one that rusted out, Yippee! Michigan biscuits rounded out the meal!
